Green Bean with Garlic Recipe- Prevents Blood Sugar from Rising After Meals

You will enjoy this green bean with garlic recipe.  This is very simple- green beans are sautéed in olive oil and garlic.  The decision to add a little bit of Italy and sprinkle bread crumbs makes this delicious.  Green beans are an excellent source of fiber and provide other very important health benefits:

Studies have shown that the high fiber contained in beans prevents blood sugar levels form rising too rapidly after a meal.  This makes beans an especially good choice for individuals with diabetes, insulin resistance, or hypoglycemia.

Common beans promote heart health due to their fiber, antioxidants, folic acid, vitamin B6, and magnesium.  Folic acid and vitamin B6 help to lower levels of homocysteine, which is an amino acid that is an intermediate product in an important metabolic process called the methylation cycle.

Elevated blood levels of homocysteine are an independent risk factor for heart attack, stroke, and peripheral vascular disease. 1 lb. fresh green beans, trimmed and washed (preferably organic)

¼ cup olive oil

1 bulb garlic peeled and sliced thin

Breadcrumbs (eliminate if you are diabetic, still yummy!)

Sautè garlic in olive oil until slightly brown.  Add green beans; sprinkle with a little bit of water to moisten.  Sprinkle with a layer of breadcrumbs.  Cover.  Cook on medium heat for approximately 10 minutes stirring frequently.
